Preparation
  1. In a bowl, combine yogurt, olive oil, lemon juice, garlic, cumin, coriander, paprika, salt, and pepper to make the marinade.
  2. Add the chicken cubes to the marinade and mix until well coated.
  3. Cover and refrigerate for at least 1 hour, preferably overnight.
Cooking
  1. Preheat the grill or oven to medium-high heat.
  2. Thread the marinated chicken onto skewers.
  3. Grill the kebabs for about 10-15 minutes, turning occasionally, until fully cooked and slightly charred.

Notes

Leftover skewers can be refrigerated in an airtight container for up to three days. When ready to enjoy, reheat in the oven at 350°F until warmed through. You can also microwave for a quicker option, though this may make the chicken slightly less crispy.
