Preparation
  1. In a glass, muddle the peach slices and grated ginger until the peaches are juicy.
  2. If desired, add honey or agave syrup to sweeten and stir until dissolved.
  3. Fill the glass with ice cubes.
  4. Pour sparkling water or ginger ale over the mixture slowly to retain fizz.
  5. Stir gently to combine without losing bubbles.
  6. Garnish with fresh mint leaves.

Notes

This mocktail tastes best freshly made. Store the muddled peach mixture and sparkling water separately if necessary. For a twist, add a splash of white rum or vodka for adults.
