  • 1 cup Sweet Corn, canned or frozen Adds a lovely sweetness.
  • 4 cups Romaine Lettuce, chopped Can use mixed greens for extra texture.
  • 1 large Avocado, diced Brings creaminess and healthy fats.
  • 1 cup Cherry Tomatoes, halved For flavor and color.
  • 1/2 cup Chipotle-Lime Dressing Add extra lime juice for brightness.

Method
 

Preparation
  1. Grill the chicken until fully cooked, about 6-8 minutes on each side over medium heat.
  2. In a large bowl, combine black beans, sweet corn, chopped romaine lettuce, diced avocado, and halved cherry tomatoes.
  3. Add the grilled chicken to the salad mixture and combine well.
  4. Drizzle with chipotle-lime dressing and toss until well mixed.
  5. Serve immediately or prepare in advance for meal prep.

Notes

Store salad components separately to keep them fresh. Enjoy within two days for the best taste.
