- Begin by shredding the cooked chicken. Use leftover rotisserie chicken to save time if you like.
- Cook your bacon until crispy. I always make a bit extra so we can snack on it while preparing!
- In a large bowl, combine the shredded chicken, crumbled bacon, halved cherry tomatoes, and chopped romaine lettuce.
- In a separate bowl, mix the mayonnaise with the Dijon mustard. Season the dressing with salt and pepper.
- Pour the dressing over the chicken mixture and toss gently to coat everything evenly.
- Serve chilled or at room temperature.
Notes
This salad is forgiving; feel free to use whatever ingredients you have on hand. Fresh herbs can enhance the flavors. Cooking with family can create lasting memories.
