  • 4 slices bacon, cooked and crumbled Cook until crispy.
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
Dressing Ingredients
  • 1/2 cup mayonnaise Can be substituted with yogurt.
  • 2 tablespoons Dijon mustard
  • to taste salt and pepper Adjust according to personal preference.

  1. Begin by shredding the cooked chicken. Use leftover rotisserie chicken to save time if you like.
  2. Cook your bacon until crispy. I always make a bit extra so we can snack on it while preparing!
  3. In a large bowl, combine the shredded chicken, crumbled bacon, halved cherry tomatoes, and chopped romaine lettuce.
  4. In a separate bowl, mix the mayonnaise with the Dijon mustard. Season the dressing with salt and pepper.
  5. Pour the dressing over the chicken mixture and toss gently to coat everything evenly.
  6. Serve chilled or at room temperature.

Notes

This salad is forgiving; feel free to use whatever ingredients you have on hand. Fresh herbs can enhance the flavors. Cooking with family can create lasting memories.
