Ingredients
  

For the Chicken Marinade
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • to taste salt and pepper
For the Tacos
  • 4 small tortillas Warm them before serving
  • 1 cup diced tomatoes
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • for garnish fresh parsley Don't skip the fresh herbs

Method
 

Preparation
  1. In a bowl, combine olive oil, oregano, paprika, salt, and pepper. Add chicken breasts and marinate for 15 minutes.
  2. Chop the veggies while the chicken marinates.
Cooking
  1. Heat a skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side or until cooked through. Remove from the skillet and let rest before slicing.
  2. In the same skillet, warm the tortillas for a minute on each side.
Assembly
  1. Place sliced chicken on each tortilla. Top with diced tomatoes, cucumber, red onion, and feta cheese. Garnish with fresh parsley.
  2. Serve immediately and enjoy the meal.

Notes

Use what you have on hand for flexibility. Store leftovers in airtight containers for 3-4 days. Reheat in microwave or oven at 350°F for 10 minutes to regain juiciness.
