Method
 

Preparation
  1. In a bowl, mix olive oil, soy sauce, minced garlic, honey or brown sugar, salt, and pepper to create a marinade. This step is crucial, as the marinade infuses the chicken with flavor.
  2. Add the cubed chicken to the marinade, cover, and let it sit for at least 30 minutes. While you wait, it’s a great time to prepare your veggies.
  3. Preheat the grill to medium heat.
  4. Thread the marinated chicken, pineapple chunks, and bell peppers onto skewers, alternating between them.
Cooking
  1. Grill the kabobs for about 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  2. Serve with rice or a fresh salad.

Notes

Use chicken thighs instead of breasts for a juicier bite. Experiment with different colors of bell peppers to add a pop of color. Always taste your marinade before adding chicken to ensure it meets your flavor preferences.
