  • 4 pieces boneless, skinless chicken breasts Choose chicken that feels firm and has a fresh smell.
  • 2 tablespoons olive oil Extra virgin olive oil adds richness.
  • 1 cup balsamic vinegar Opt for high-quality balsamic for the best flavor.
  • 1 cup cherry tomatoes, halved Look for plump and colorful tomatoes.
For Topping
  • 1 cup mozzarella cheese, shredded For the creamiest melt, use whole milk mozzarella.
  • 1/4 cup fresh basil, chopped Fresh basil enhances the dish's aroma.
  • to taste salt and pepper Always season to your preference.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper, and add them to the skillet. Brown the chicken on both sides for about 5 minutes.
  4. Pour balsamic vinegar over the chicken and add the cherry tomatoes.
  5. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  6. During the last 5 minutes of baking, sprinkle mozzarella cheese on top of the chicken.
  7. Remove from the oven, garnish with fresh basil, and serve.

Notes

For leftovers, let the chicken cool to room temperature, then transfer it to an airtight container. It can be stored in the fridge for up to 3 days. To reheat, pop it in the microwave until warmed through or back in the oven at 350°F (175°C) for about 10-15 minutes.
