  • 4 pieces chicken breasts Pick evenly sized breasts for even cooking.
  • 1 cup honey Use mild-flavored honey.
  • 1 cup BBQ sauce Choose a medium-sweet sauce.
  • 1 cup chicken broth Low-sodium helps control salt.
  • 1 tablespoon olive oil Used to brown the chicken.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe pan, heat olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper and cook until browned on both sides.
  4. In a bowl, mix honey and BBQ sauce together.
  5. Remove the chicken from the pan and set aside.
  6. Add rice and chicken broth to the pan, stirring to combine.
Cooking
  1. Place the chicken back on top of the rice mixture and pour the honey BBQ sauce over it.
  2. Cover the pan with a lid or foil and bake for about 25-30 minutes, or until the chicken is cooked through and the rice is tender.
  3. Garnish with chopped green onions if desired before serving.

Notes

Serve family-style from the pan. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months.
