  • 1 cup plain Greek yogurt This is the star of your marinade. It adds moisture and a creamy tang.
  • 2 tablespoons olive oil A must for adding richness and helping the marinade stick.
  • 3 cloves garlic, minced Fresh garlic brings an incredible depth of flavor.
  • 2 tablespoons lemon juice Fresh is best! It adds brightness to the dish.
  • 1 tablespoon dried oregano A classic herb that complements the chicken beautifully.
  • to taste teaspoon salt and pepper Enhance all the flavors perfectly.
Main Ingredients
  • 4 pieces chicken thighs, bone-in and skin-on Preferred for a juicier result.

Method
 

Preparation
  1. In a large bowl, mix the Greek yogurt, olive oil, minced garlic, lemon juice, oregano, salt, and pepper.
  2. Add the chicken thighs to the marinade, ensuring they are well coated.
  3. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
Cooking
  1. Preheat the oven to 400°F (200°C).
  2. Remove the chicken from the marinade and place it on a baking tray.
  3. Bake for 25-30 minutes or until cooked through and the internal temperature reaches 165°F (75°C).
  4. Let the chicken rest for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10-15 minutes.
