Ingredients
  

For the marinade
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

For the skewers
  • 1 lb chicken breast, cut into chunks
  • Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes before using.

Preparation
  1. In a bowl, combine olive oil, lemon juice, lemon zest, black pepper, garlic powder, oregano, and salt.
  2. Add chicken chunks to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Thread marinated chicken onto skewers, keeping them tight for uniform cooking.
  3. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
  4. Remove from grill and serve hot.

Notes

Serve family-style with a fresh green salad or grilled vegetables. Store leftovers in an airtight container for up to 3 days, reheating gently to maintain moisture.
