Ingredients
  

For the marinade
  • 1/4 cup olive oil A good quality olive oil enhances flavor.
  • 1/4 cup lemon juice Freshly squeezed is best.
  • 3 cloves garlic, minced Fresh garlic adds robust flavor.
  • 1 tablespoon dried oregano Fresh oregano can be used for more flavor.
  • to taste salt and pepper Adjust according to preference.
For the chicken
  • 4 pieces chicken thighs Chicken thighs remain moist during cooking.

Method
 

Marinating the Chicken
  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Place chicken thighs in a zip-top bag and pour marinade over the chicken.
  3. Seal and refrigerate for at least 30 minutes, or overnight for deeper flavor.
Cooking the Chicken
  1. Preheat the grill or oven to 400°F (200°C).
  2. Remove chicken from marinade and discard the marinade.
  3. Grill or bake chicken for 25-30 minutes, or until cooked through and juices run clear.
Serving the Dish
  1. Serve hot on a large platter with a sprinkle of fresh herbs.

Notes

If storing leftovers, keep in an airtight container in the fridge for 3-4 days. You can reheat in the microwave or stovetop with a splash of water to keep them moist.
