Marinating the Chicken
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Place chicken thighs in a zip-top bag and pour marinade over the chicken.
- Seal and refrigerate for at least 30 minutes, or overnight for deeper flavor.
Cooking the Chicken
- Preheat the grill or oven to 400°F (200°C).
- Remove chicken from marinade and discard the marinade.
- Grill or bake chicken for 25-30 minutes, or until cooked through and juices run clear.
Serving the Dish
- Serve hot on a large platter with a sprinkle of fresh herbs.
