Ingredients
  

For the marinade
  • 1/4 cup honey Can swap with maple syrup for a different sweet flavor.
  • 1/4 cup soy sauce Use gluten-free soy sauce for gluten-free option.
  • 2 cloves garlic, minced Aromatic addition to the marinade.
  • 1 tablespoon ginger, grated Adds freshness and warmth.
  • 1 tablespoon olive oil
  • to taste salt and pepper Season according to preference.
For the skewers
  • 2 lbs chicken breast, cut into cubes Can use chicken thighs for juiciness.
  • Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes to prevent burning.
Optional vegetables
  • Bell peppers (red or green), onion (yellow), zucchini For added color and flavor.

Method
 

Preparation
  1. In a bowl, whisk together honey, soy sauce, garlic, ginger, olive oil, salt, and pepper to make the marinade.
  2. Add the chicken cubes to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated chicken onto skewers, alternating with vegetables if desired.
  3. Grill skewers for about 10-15 minutes, turning occasionally, until chicken is cooked through.
Serving
  1. Serve hot with rice or roasted vegetables on a large platter.
  2. Garnish with fresh herbs for added color.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or skillet to keep juicy. Consider preparing the marinade a day in advance for deeper flavor.
