  • 4 medium potatoes Leave skins on for texture.
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese Can substitute with Pecorino.
  • 2 cloves garlic, minced Fresh or pre-minced.
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional.

Preparation
  1. Preheat the grill to medium-high heat and ensure the grates are clean and lightly oiled.
  2. Season chicken breasts with salt and pepper, patting them dry for a better crust.
  3. Brush the chicken with honey BBQ sauce and grill for 6-7 minutes per side, or until cooked through.
  4. While chicken is grilling, wash and chop potatoes into bite-sized pieces.
Cooking Potatoes
  1. In a bowl, toss potatoes with olive oil, minced garlic, salt, and pepper.
  2. Transfer potatoes to a baking dish and sprinkle with Parmesan cheese.
  3. Bake at 400°F (200°C) for 25-30 minutes, or until golden and tender.
