Dressing Ingredients
  • 2 cloves garlic, chopped If your food processor won't cut it finely.
  • 1 cup mayo (recommended: Hellman's Vegan Mayo) Can substitute with Greek yogurt for a tangier version.
  • 2 tsp dijon mustard
  • ½ tsp mustard powder
  • 1-2 tbsp white vinegar Start with one tbsp, add more for a more acidic dressing.
  • 2 tsp Worcestershire sauce For a savory, umami flavor.
  • ½ cup shredded parmesan Use freshly grated for more flavor.
  • 1/2 piece lemon (juice only) Adds brightness.
  • 2 tbsp olive oil (approx.)
  • ½ tsp ground black pepper

Method
 

Preparation
  1. Add all ingredients except for the olive oil to the food processor.
  2. Select the puree option on your food processor.
  3. Begin to puree the ingredients and scrape the bowl once for even mixing.
  4. Slowly add one tablespoon of olive oil while pureeing until the dressing is creamy.
  5. Test the dressing for texture and taste, adjust salt, lemon, or vinegar if needed.
  6. Add more olive oil until the desired consistency is achieved.
  7. Store in an airtight container in the fridge and use within 3-4 days.

Notes

Allow the dressing to rest for 30 minutes in the fridge before serving to enhance flavor. If it thickens too much, stir in a teaspoon of water or more lemon juice before serving.
