Ingredients

For the Marinade
  • 1/2 cup soy sauce Look for low-sodium options if you're watching your salt intake.
  • 1 tablespoon fresh ginger, grated Gives the marinade a zesty kick.
  • 3 cloves garlic, minced Fresh cloves are best, but jarred garlic works in a pinch.
  • 1/4 cup brown sugar Balances the saltiness with sweetness.
  • 1/2 cup pineapple juice Use 100% juice for natural flavor.
For the Chicken
  • 4 pieces bone-in chicken thighs These stay juicy and flavorful, making it perfect for grilling.
Optional Sides
  • 2 cups steamed rice White or brown rice can help soak up the juices.
  • 1 cup salad greens A simple side salad with light vinaigrette is perfect.
  • 1 cup grilled pineapple Grilled pineapple becomes caramelized and sweet.

Method

Marinade Preparation
  1. In a bowl, mix soy sauce, grated ginger, minced garlic, brown sugar, and pineapple juice to create the marinade. Whisk thoroughly.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Marinate for at least 30 minutes, or overnight in the refrigerator for best results.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F.
Serving
  1. Serve the grilled chicken with rice, salad, or grilled pineapple, setting the table family-style for a warm gathering.
  2. Garnish with fresh herbs or slices of lime, if desired.

Notes

Leftover Hawaiian BBQ Chicken can be stored in an airtight container in the refrigerator for up to four days. Reheat in the oven at 350°F for best flavor retention.
