Ingredients
  

For the Marinade
  • 1/4 cup olive oil Good extra virgin olive oil adds flavor.
  • 2 tablespoons lemon juice Fresh lemon juice brightens the marinade.
  • 2 cloves garlic, minced Mince finely for better infusion.
  • 1 teaspoon dried oregano Use fresh oregano if available, increasing the amount.
  • to taste salt and pepper Season generously.
Main Ingredients
  • 4 pieces chicken breasts Choose even-sized breasts or pound to an even thickness.

Method
 

Marinade Preparation
  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add the chicken breasts to the marinade and let it sit for at least 30 minutes, or up to 2 hours in the fridge.
Grilling
  1. Preheat the grill to medium-high heat (around 400°F to 450°F).
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked (internal temperature reaches 165°F).
  3. Remove from the grill and let rest for a few minutes before serving.
Serving
  1. Serve family-style on a large platter with sliced breasts and any resting juices or extra olive oil on top, garnished with lemon wedges.

Notes

Store leftovers in an airtight container for up to 4 days. Can be frozen for up to 3 months.
