- In a bowl, whisk together olive oil, soy sauce, apple cider vinegar, lemon juice, garlic, honey, oregano, paprika, salt, and pepper. Breathe in the lovely aroma as you mix.
- Place the chicken in a resealable plastic bag or a shallow dish and pour the marinade over it. Ensure the chicken is well-coated.
- Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight.
Cooking
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 6-8 minutes per side or until fully cooked, reaching an internal temperature of 165°F.
- Let the chicken rest for a few minutes before serving.
Notes
Serve family-style; slice the chicken into thick pieces. Pair with seasonal vegetables, salad, rice, or creamy mashed potatoes. Store leftovers in an airtight container for 3-4 days, reheating with a splash of chicken broth to keep the chicken juicy.
