Ingredients

Main Ingredients
  • 2 cups rotisserie chicken, shredded Shredding the chicken while it’s still warm makes it easier and adds a nice warmth to the salad.
  • 1/2 cup creamy green goddess dressing You can find store-bought options, but homemade dressing is simple and delightful if you have time!
  • 1/2 cup celery, diced Choose crisp stalks for that satisfying crunch in every bite.
  • 1/4 cup red onion, diced Rinse the diced onions under cold water to mellow their flavor if your family isn’t fond of the sharp taste.
  • 1/4 cup fresh herbs (such as parsley, basil, or chives), chopped Use a mix of herbs to add complexity in flavor; don’t be afraid to experiment!
  • Salt and pepper to taste Always taste as you go to ensure the seasoning is just right for your family’s palate.

Method

Preparation
  1. In a large bowl, combine the shredded rotisserie chicken, green goddess dressing, diced celery, diced red onion, and chopped herbs.
  2. Take your time mixing; the goal is to ensure every piece of chicken is coated in that delicious dressing!
  3. Mix until well combined and enjoy the beautiful colors that come together as you stir!
  4. Season with salt and pepper to taste, keeping in mind that a little seasoning can go a long way in enhancing the flavors.
  5. Serve immediately or refrigerate for later; this salad tastes even better after the flavors meld in the fridge for a while!

Notes

If you have leftovers, store them in an airtight container in the fridge for up to three days. Keep the dressing separate if possible and add a splash of water or olive oil if it thickens.
