Ingredients
  

For the marinade
  • 1/4 cup olive oil
  • 1/4 cup lemon juice Use fresh for best flavor.
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the kabobs
  • 1 pound chicken breast, cut into cubes
  • 1 set Wooden or metal skewers If using wooden skewers, soak in water for 30 minutes before grilling.

Preparation
  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Add the chicken cubes to the marinade, cover, and refrigerate for at least 1 hour or overnight.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated chicken, bell pepper, and onion onto the skewers.
  3. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
  4. Serve hot and enjoy your delicious Greek kabobs.

Notes

Marinate overnight for best flavor. If you have leftovers, store in an airtight container in the refrigerator for up to three days.
