Ingredients
  

For the Potatoes
  • 4-5 medium small/medium-sized potatoes Cubed
  • 2 tablespoons olive oil For tossing the potatoes
  • 1 teaspoon salt For seasoning
  • 1 teaspoon pepper For seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika For seasoning potatoes
For the Chicken
  • 2 breasts chicken Cubed
  • 2 tablespoons butter For cooking
  • ½ teaspoon salt For seasoning
  • ½ teaspoon pepper For seasoning
  • 1 teaspoon paprika For seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
For the Garlic Sauce
  • 2 tablespoons minced garlic
  • as desired Buffalo Wild Wings Garlic Parmesan Sauce
  • 1 cup shredded mozzarella cheese

Method
 

Preparation
  1. Wash and peel the potatoes, then cut them into small cubes.
  2. Toss the cubed potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
Cooking Potatoes
  1. Preheat the air fryer to 400°F and cook the potatoes for about 20 minutes, shaking the basket a couple of times to ensure even cooking.
  2. The potatoes should be crispy on the outside and tender inside.
Seasoning Chicken
  1. While the potatoes are cooking, cut the chicken breasts into small cubes.
  2. In a bowl, season the chicken with ½ teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
Cooking Chicken
  1. Heat 2 tablespoons of butter in a skillet over medium-high heat.
  2. Add the seasoned chicken cubes and cook until they reach an internal temperature of 165°F and are fully cooked through.
Adding Garlic and Sauce
  1. Stir in the minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce to the skillet.
  2. Cook for an additional 1-2 minutes, stirring to coat the chicken evenly in the sauce.
Combining Potatoes and Chicken
  1. Once the air-fried potatoes are done, add them to the skillet with the chicken.
  2. Toss everything together so the potatoes are coated with the sauce.
Melting the Cheese
  1. Sprinkle the shredded mozzarella cheese on top of the skillet.
  2. Cover the skillet with a lid until the cheese melts or transfer to the oven under the broiler until bubbly and golden.

Notes

Don't skip small, fresh touches if available. A sprinkle of fresh parsley or grated Parmesan at the end elevates the dish. Leftovers can be stored in an airtight container for up to 3 days.
