- Heat olive oil in a large skillet or pot over medium-high heat. Season the chicken with salt and pepper, then brown it on each side for a few minutes.
- Lower the heat and add the onion. Cook until the onion is soft, then add the garlic and stir for about 30 seconds.
- Pour in the chicken broth and scrape the bottom of the pan to release any flavorful bits.
- Add the cream, seasoning, and parmesan (if using). Let it bubble gently for a few minutes to thicken.
- Stir in the spinach and cook until wilted. Add the chicken back into the pot, cover, and cook until the chicken is done.
- Adjust the consistency of the sauce by adding broth if it's too thick or simmer uncovered if it's too thin.
Notes
Substitute cream with half and half, evaporated milk, Greek yogurt, cream cheese, or coconut milk if desired. Serve with rice, pasta, or crusty bread for a full meal.
