  • 1.5 lbs boneless, skinless chicken breasts Look for chicken that is plump and has a nice pink color.
  • 8 oz fettuccine or penne pasta Choose your family’s favorite pasta shape.
  • 3 tbsp unsalted butter I prefer unsalted for better control of seasoning.
  • 1 cup heavy cream Use high-quality cream for best results.
  • 4 cloves fresh garlic, minced Fresh garlic adds incredible depth of flavor.
  • 2 tsp Italian seasoning Look for a blend that includes basil, oregano, and thyme.
  • to taste salt and pepper Essential for enhancing flavors.

Method

Cooking the Pasta
  1. Boil salted water in a large pot. Add pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
Sautéing the Chicken
  1. In a skillet over medium heat, melt 2 tablespoons of butter. Season chicken with salt, pepper, and Italian seasoning.
  2. Cook for about 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and let rest.
Making the Sauce
  1. In the same skillet, melt the remaining butter over medium heat. Sauté minced garlic until fragrant, about 1 minute.
  2. Add the heavy cream and stir until the sauce slightly thickens.
Combining
  1. Slice the rested chicken into bite-sized pieces and return it to the skillet with the drained pasta.
  2. Toss gently in the sauce until everything is well coated.
Serving
  1. Plate generously and garnish with extra Italian seasoning or freshly grated Parmesan if desired.

Notes
