  • 3 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup low-fat cottage cheese
  • 1 cup chopped celery
  • 0.5 cup finely diced red onion
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh herbs (dill or parsley)

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place seasoned chicken breasts on a parchment-lined baking sheet.
  3. Bake for 25-30 minutes until fully cooked, then let it rest for about 5 minutes.
  4. While the chicken is baking, chop your celery and red onion.
  5. Shred the cooled chicken into bite-sized pieces.
  6. In a large mixing bowl, combine shredded chicken, cottage cheese, celery, onion, Dijon mustard, and fresh herbs. Stir until well-coated.
  7. Taste and adjust seasoning as needed with salt and pepper.

Notes
