  • 1/2 cup cilantro (chopped) Substitute with parsley if desired.
  • 2 cloves garlic (minced) Fresh garlic enhances flavor.
  • 1 tablespoon olive oil Extra virgin is best for searing.
  • Salt and pepper to taste Season generously.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in a skillet over medium heat and add minced garlic, cooking until fragrant, about 30 seconds.
Cooking
  1. Add the chicken breasts to the skillet and sear on both sides until golden brown, about 4-5 minutes per side.
  2. In a bowl, mix coconut milk, lime juice, lime zest, and chopped cilantro.
  3. Pour the coconut mixture over the chicken in the skillet, ensuring the chicken is mostly covered.
  4. Transfer the skillet to the oven and bake for about 20 minutes, or until the chicken is cooked through at an internal temperature of 165°F.
