Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Use thicker pieces for juicier meat.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning Feel free to adjust to taste.
  • 2 large eggs Beaten.
For the Coating
  • 1 cup breadcrumbs Panko can be used for extra crunch.
  • 1/2 cup grated Parmesan cheese Adds fantastic flavor.
For Cooking
  • 1/4 cup olive oil For frying the chicken.
For Topping
  • 2 cups marinara sauce Don't skimp on the sauce.
  • 1 cup shredded mozzarella cheese
For Garnish
  • 1 bunch fresh basil Optional, but adds vibrancy.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  3. In a shallow bowl, combine breadcrumbs and grated Parmesan cheese.
  4. Dip each chicken breast in beaten eggs, then coat with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Fry the chicken for 3-4 minutes on each side until golden brown.
  3. Once browned, place the chicken in a baking dish.
  4. Top each piece with marinara sauce and shredded mozzarella cheese.
  5. Bake in the preheated oven for 15-20 minutes until the cheese is bubbly.
Serving
  1. Garnish with fresh basil if desired and serve family-style.

Notes

Store leftovers in an airtight container. For best results, reheat in the oven to maintain crunchiness. You can also freeze unbaked chicken Parmesan for later use.
