  • 1 cup pineapple chunks Fresh pineapple works wonders, but canned will do if drained well.
  • 1 piece bell pepper, diced Select your favorite color—red, green, or yellow.
  • 1 piece onion, diced A sweet onion adds a lovely flavor.
  • 2 tablespoons soy sauce Use low-sodium soy sauce for a healthier option.
  • 1 tablespoon olive oil Helps to prevent sticking and adds richness.
  • to taste salt and pepper Freshly ground black pepper is recommended.

  1. Preheat your Blackstone griddle over medium-high heat.
  2. In a large bowl, combine the diced chicken, soy sauce, salt, and pepper until the chicken is well-coated.
  3. Add olive oil to the griddle and when hot, add the chicken. Cook until browned and cooked through, about 5-7 minutes, stirring occasionally.
  4. Add the diced onion, bell pepper, and pineapple chunks to the griddle and stir-fry for an additional 5 minutes or until vegetables are slightly tender.
  5. Serve warm and enjoy your delicious Blackstone Pineapple Chicken!

Notes
