Preparation
- Preheat the griddle to medium.
- Add cooking oil to the griddle, then add the chicken thighs.
- Season the chicken generously with kosher salt, pepper, and BBQ seasoning.
- Cook for about 6 minutes, stirring occasionally.
- Add 3 tablespoons of BBQ sauce and 2 tablespoons of hot honey to the chicken and cook for another 2 minutes.
- Remove the chicken from the griddle and scrape it clean.
- Lower the heat to medium-low and add more cooking oil to the griddle.
Cooking
- Lay the tortillas flat on the griddle.
- On one side of each tortilla, sprinkle half of the cheese, then add the chicken mixture, drizzle more BBQ sauce and hot honey, and sprinkle with cilantro.
- Pile on the remaining cheese.
- Fold the empty side of each tortilla over the filled side.
- Cook the quesadillas for about 1-2 minutes on each side, or until the cheese is melted and tortillas are crisped to your liking.
- Serve with sour cream and jalapenos if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven for 10 minutes at 350°F to restore crispiness.
