Preparation
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
- Add the egg, vanilla, and lemon zest, and beat until combined.
Mixing
- Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
- Slowly add the dry mix to the wet ingredients and stir until just combined.
Forming Cookies
- Scoop dough into rounded tablespoons or use a small cookie scoop. Roll each ball in powdered sugar to coat.
- Make a small indentation in the center of each dough ball and spoon about 1/2 to 3/4 teaspoon of berry jam into each indentation.
Baking
- Bake for 9 to 12 minutes, until edges are lightly golden and centers look set but still soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Serving
- Serve Berry First Birthday Cookies on a large platter. Pair with milk, chamomile tea, or sparkling lemonade.
