Ingredients
  

Base Ingredients
  • 1 cup unsalted butter, softened Do not skip for best flavor.
  • 1 cup granulated sugar
  • 1 large egg, room temperature Let kids help crack the egg.
  • 2 teaspoons pure vanilla extract Brings warmth to the cookies.
  • 1 lemon Zest of 1 lemon Optional but adds great flavor.
Dry Ingredients
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup powdered sugar For rolling.
Filling
  • 3/4 cup berry jam or mixed berry compote Use your favorite berry.
  • 1/4 cup fresh berries, chopped small Optional, for added texture.
Decoration
  • to taste Sprinkles or edible decorations Optional for a first birthday.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
  3. Add the egg, vanilla, and lemon zest, and beat until combined.
Mixing
  1. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  2. Slowly add the dry mix to the wet ingredients and stir until just combined.
Forming Cookies
  1. Scoop dough into rounded tablespoons or use a small cookie scoop. Roll each ball in powdered sugar to coat.
  2. Make a small indentation in the center of each dough ball and spoon about 1/2 to 3/4 teaspoon of berry jam into each indentation.
Baking
  1. Bake for 9 to 12 minutes, until edges are lightly golden and centers look set but still soft.
  2. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Serving
  1. Serve Berry First Birthday Cookies on a large platter. Pair with milk, chamomile tea, or sparkling lemonade.

Store in an airtight container for up to 48 hours or freeze for up to 2 months. Reheat to refresh texture.
